Pico De Gallo

  • Serves: 8 servings

Ingredients

  • 1 tbsp. of cannabis infused oil
  • 2 medium fresh tomatoes, diced
  • 1 medium white, brown or red onion, diced
  • 2 to 3 Serrano or jalapeño green chilies (most seeds removed and diced)
  • 1 large handful of fresh cilantro (diced small)
  • Juice of 1 large or 2 small fresh limes
  • Several (to taste) fresh cannabis leaves finely chopped
  • Sea Salt and Black Pepper ( to taste)

DIRECTIONS:

  • Combine diced onions, chilies, and tomatoes in a bowl
  • Add salt and pepper
  • Pour ½ of lime juice over mixture and let set for a few minutes
  • Add Chopped Cilantro and Chopped cannabis leaves
  • Stir and allow to sit a few minutes.Taste for salt and lime juice.Add a bit more, if desired
  • Spoon cannabis infused oil over salsa and toss gently
  • Serve with tortilla chips.

This recipe is very simple and perfect for beginners to cannabis recipes. It is perfect for a meal, party, or appetizer.

Ingredients

  • 1/4 C Cannabis-Infused Oil
  • 2 lbs Fresh firm-fleshed fish. Deboned and cut
  • 1/2 C Fresh-squeezed lime juice
  • 1/2 C Fresh-squeezed lemon juice
  • 1/2 Finely diced white or red onion
  • 1 C Fresh seeded tomatoes
  • 1 chopped jalapeno or seranno chili
  • 2 tsp Salt
  • Dash ground oregano
  • Dash Tabasco or light pinch of cayenne

Instructions

  1. Gently stir all ingredients together until thoroughly mixed.
  2. Make sure the cannabis-infused oil soaks into the fish.
  3. Refrigerate for at least 30 minutes.
  4. Serve with chips, tortillas, or sauteed veggies

CJ’s Cannabis-Infused Honey

My brother gave me this recipe. He was medical user and an advocate for legalizing cannabis for recreational use. He used cannabis for pain and swore by this recipe.

It is very easy to make and perfect for someone who has never made cannabis-infused food before.

Support local business and use local honey.

It’s perfect for tea in the morning.

What You’ll Need

  • Slow cooker
  • 15 grams of your favourite cannabis (decarbed).
  • 2 C of honey
  • Cheesecloth
  • String to tie the cheesecloth
  • Canning jar with lid.

Recipe

  1. Put the decarbed cannabis in cheesecloth and tie it closed with a small piece of string.
  2. Place the cheesecloth in the canning jar
  3. Pour 2 cups of honey into the canning jar
  4. Place the canning jar in the slow cooker.
  5. Add water into the slow cooker. Enough to be level with the honey level in the jar.
  6. Set the slow cooker to LOW and cook for 8 hours.
  7. Check every few hours to make sure the pressure in the jar isn’t building. If it does, simply open the lid slightly to release the pressure and close it again.
  8. After 8 hours, turn the slow cooker off and let the honey cool. If you wish to remove it, use oven mitts or tongs.
  9. When the honey is cool enough to touch, remove the cheesecloth from the jar and squeeze out the honey. Be careful.
  10. Keep the cheese cloth and steep a pot of tea.
  11. Store the jar in your refrigerator or in a cool, dark place.

Pesto

This cannabis-infused pesto can be used with pasta, or as sauce on pizza, sandwiches, and as dressings.

Ingredients

  • 1/2 C Cannabis butter
  • 2 C Fresh basil leaves (1 large bunch)
  • 3 Garlic cloves
  • 1/2 C Pine nuts (or walnuts)
  • 3/4 C Freshly grated hard cheese (Parmigiano-reggiano, pecorino-romano, or combo)
  • 1/4 Pepper

Directions

  • Combine all ingredients, except butter and cheese, in a food processor and pulse until blended to a slightly course paste.
  • Transfer to bowl
  • Stir in room temp/softened butter and cheeses.

When serving with pasta, toss noodles with pesto in bowl and serve.

Topical Cream

Ingredients

  • 1 cup coconut oil
  • 10 grams of high CBD dry cannabis
  • 1 ounce of beeswax 3 tablespoons or ¼ cup of shea butter
  • 2 tablespoons of Emu oil
  • 20-30 drops of essential oils (peppermint or eucalyptus)

Step One

  • Decarboxylate 10 grams of ground cannabis at 240 degrees F for 50 minutes.
  • Put in a mason jar with 1 cup of coconut oil
  • Place on a teatowel on bottom then add water to the crock pot and place inside for 10-12 hours on warm.
  • Strain through a coffee filter secured onto another mason jar and strain.

Step Two

  • In clean mason jar melt 1 ounce of grated beeswax until liquid
  • Add ¼ cup or 3 tablespoons of shea butter
  • Add the strained cannabis oil to the jar
  • Add 2 tablespoons of Emu oil to jar
  • Add 20-30 drops of Essential oils to jar until desired scent

Once cooled down pour into a glass container(s) and once solidifies rub on painful area.

Decarb Your Cannabis

Decarb (Decarboxylation)

Making edible with raw cannabis will not have much of an effect. To get the most out of your edibles, the THC and CBD must be activated into doing their job through a process called decarboxylation.

Terpenes start to break down at 310 degrees Fahrenheit. The best temperature to decarb your weed then, is right around 225 degrees Fahrenheit.

Instructions to Decarb your Cannabis

  • Preheat your oven to 225 degrees Fahrenheit.
  • If you have trim or shake place it on a cookie sheet lined with parchment paper. If you have dried bud, break up your dried bud into small pieces first. Be sure to remove any stems in the process.
  • Bake for 30-40 minutes. Move and flip every 10 minutes so it cooks evenly.
  • Remove from the oven and let cool. The cannabis will be light brown, dry and crumbly, when it’s done.

Now you have decarb and are ready to make edibles

Cannabis-Infused Cooking Oil

Note: Coconut and olive oil are the most common choices; coconut oil has a milder taste and can therefore be used for more dishes, whereas olive oil is the staple cooking oil for most kitchens. THC works well with high fat ingredients like coconut oil.

Note: Be cautious when using the oil to prepare dishes that require heating. Do not microwave and choose low heat whenever possible.

Ingredients:

  • 1 cup of ground cannabis flower (or less for milder potency)
  • 1 cup of cooking oil of your choice

Hardware:

  • Strainer or cheesecloth
  • Grinder (a simple hand grinder works best; appliances like blenders and coffee grinder pulverize the cannabis, resulting in edibles with bad tasting plant material)
  • Double-boiler, slow cooker, saucepan, etc.

Directions:

  1. Grind the cannabis, not fine enough to pass through cheesecloth.
  2. (For already decarbed Cannabis, move to step 3)
  3. Combine oil and cannabis in your double-boiler or slow cooker
  4. Heat on low or warm for a few hours to decarb cannabis.
  5. Combines Cannabis and oil in either:
    • A slow cooker on low for 4-6 hours, stirring occasionally
    • A double-boiler on low for at least 6 – 8 hours, stirring occasionally
    • A saucepan on low for at least three hours, stirring frequently (a saucepan is most susceptible to scorching).

In all cases, a small amount of water can be added to the mixture to help avoid burning. Note: whatever method you choose, temperature of the oil should not exceed 245°F.

6. Strain

  • Lay cheesecloth in the strainer
  • Pour oil into the center and slowly into the center of the cheesecloth/strainer.
  • Strain and store the oil.
  • Do not squeeze the cheesecloth, let drain

Oil stored at room temp can last 2 months. Can be extended with refrigeration.

Cannabis Butter

Stove Top

Ingredients and Equipment

  • 1 lb unsalted butter
  • 1 oz Decarb cannabis
  • 4 C Water
  • Fine mesh strainer
  • Cheesecloth
  • Heat resistant glass bowl

Directions

Prep cheesecloth into fine mesh strainer and place over glass bowl.

Step 1

  • In a medium saucepan bring water to a boil.

Step 2

  • Place butter in water and let it melt

Step 3

  • Turn heat down to low. Barely a simmer and add cannabis.
  • Let cook for 3 hours.
  • You will know it’s done when it turns thick.

Step 4

  • Slowly pour butter into strainer lined with cheesecloth overtop of the glass bowl.
  • Let strain
  • Pull corners and edges of cheesecloth together and squeeze remaining butter into the glass bowl.

Step 5

  • Allow butter to cool for about an hour
  • Place in fridge until solid

Step 6

  • Take butter out of fridge.
  • You will notice the butter has separated from the remaining water
  • Use a utensil to separate the butter from the bowl
  •  Remove butter from bowl
  • Remove any water/wetness from bottom of butter.
  • Place butter in an airtight container.

Crockpot (Smaller Crockpot)

Ingredients and Items Equipment

  • 1 lb. of butter, unsalted
  • 1 oz. of Decarb Cannabis
  • Cheesecloth
  • Heat-safe container
  • Mash Strainer

Step 1

  • Set Crockpot on high for 8 hours.

Step 2

  • Place butter in Crockpot and let melt.

Step

  • Add decarb cannabis.

Step 4

  • Cover and stir every half hour.

Step 5

  • Let it cool to handle.
  • Lay cheesecloth in mesh strainer.
  • Place strainer inside heat-safe container.
  • Slowly pour butter into middle of cheesecloth and strain.
  • Collect sides and corners of cheesecloth and squeeze remaining butter.

Step 6

  • Place the covered container in the refrigerator for 6-8 hours.

Step 7

  • Remove butter from the fridge, remove from container, and scrape off the bottom layer.

Step 8

  • Place in airtight container.
